Coffee Glaze

Ingredients:

  • 25 g brewed coffee
  • 25 g mirin
  • 25 g sushi vinegar
  • 25 g Mushroom Garum
  • 65 g (smoked) butter or margarine, diced
  • 2 g cornstarch dissolved in 4 g water

How to Make the Glaze:

  1. Cook the base: Combine the brewed coffee, mirin, sushi vinegar, and Mushroom Garum in a saucepan. Bring the mixture to a boil.
  2. Thicken the glaze: Add the cornstarch mixture and let it simmer briefly until slightly thickened.
  3. Incorporate the butter: Turn off the heat and stir in the diced butter, one piece at a time, to create a smooth, glossy glaze.

How to Use the Glaze:

Brush the glaze onto tempeh, roasted vegetables, or a piece of meat.
