Grilled Corn

Ingredients
- 2 corn cobs
- 1½ tbsp unsalted butter
- 1 tbsp mushroom garum
- 1 tsp maple syrup or honey
- ½ tsp smoked paprika (optional, for a smoky touch)
- 1 small garlic clove, grated or crushed (optional)
- Freshly ground black pepper
- Pinch of chili flakes
- 1 lime
Instructions
Make the glaze:
Melt the butter in a small saucepan or heatproof bowl on the BBQ. Add the mushroom garum, maple syrup, smoked paprika, and garlic (if using). Let it simmer gently. Season with black pepper and chili flakes to taste. Set aside, keeping it warm.
Prepare the corn:
Clean the corn cobs. Brush all sides with a thin initial layer of the warm glaze.
Grill on the BBQ:
Grill the corn over direct heat, turning regularly, until grill marks appear and the surface begins to caramelize (about 8–10 minutes). Brush with additional glaze 1–2 more times during grilling for extra flavor and shine.
Serve:
Remove from the grill and generously brush with the remaining warm glaze. Serve immediately with a sprinkle of chili flakes and a squeeze of lime.
