Marinated Salmon

Ingredients

For the salmon:

  • 4 fresh salmon fillets with skin (150–225 g per person)
  • Sea salt flakes
  • Freshly ground black pepper

For the Miso Marinade:

  • 1½ tbsp neutral oil
  • 1 heaping tbsp white miso
  • 1 tbsp maple syrup (preferably dark, or use honey)
  • A splash of rice vinegar
  • 1 tsp mirin
  • 2 tsp black garlic garum
  • 1 tsp coconut aminos (optional)
  • 2 tsp freshly grated ginger
  • ½ tsp sesame oil
  • Sea salt flakes and freshly ground black pepper, to taste

Instructions

Preheat the oven

Preheat your oven to 220°C (428°F) and line a baking sheet with parchment paper.

Prepare the salmon:

  • Pat the salmon fillets dry with paper towels.
  • Cut into portions if needed.
  • Season with sea salt and black pepper.
  • Keep chilled until ready to use.

Make the miso marinade: 

Whisk together all marinade ingredients into a smooth, even sauce.

Marinate and bake the salmon:

  • Place the salmon skin-side down on the baking sheet.
  • (Optional: lightly score the skin to prevent curling during baking.)
  • Brush the top and sides with a thin layer of marinade.
  • Bake in the center of the oven for 15 minutes.

Grill for caramelization:

  • Switch the oven to grill (broil) mode.
  • Brush the salmon lightly with more marinade.
  • Grill for 1–2 minutes until it bubbles and caramelizes.
  • Keep a close eye to prevent burning.

Serve: 

Optionally garnish with pea shoots, microgreens, or fresh herbs — or enjoy as is
