Marinated Salmon

Ingredients
For the salmon:
- 4 fresh salmon fillets with skin (150–225 g per person)
- Sea salt flakes
- Freshly ground black pepper
For the Miso Marinade:
- 1½ tbsp neutral oil
- 1 heaping tbsp white miso
- 1 tbsp maple syrup (preferably dark, or use honey)
- A splash of rice vinegar
- 1 tsp mirin
- 2 tsp black garlic garum
- 1 tsp coconut aminos (optional)
- 2 tsp freshly grated ginger
- ½ tsp sesame oil
- Sea salt flakes and freshly ground black pepper, to taste
Instructions
Preheat the oven:
Preheat your oven to 220°C (428°F) and line a baking sheet with parchment paper.
Prepare the salmon:
- Pat the salmon fillets dry with paper towels.
- Cut into portions if needed.
- Season with sea salt and black pepper.
- Keep chilled until ready to use.
Make the miso marinade:
Whisk together all marinade ingredients into a smooth, even sauce.
Marinate and bake the salmon:
- Place the salmon skin-side down on the baking sheet.
- (Optional: lightly score the skin to prevent curling during baking.)
- Brush the top and sides with a thin layer of marinade.
- Bake in the center of the oven for 15 minutes.
Grill for caramelization:
- Switch the oven to grill (broil) mode.
- Brush the salmon lightly with more marinade.
- Grill for 1–2 minutes until it bubbles and caramelizes.
- Keep a close eye to prevent burning.
Serve:
Optionally garnish with pea shoots, microgreens, or fresh herbs — or enjoy as is
